- 300 g cottage cheese
- 180 g sugar
- 1 pack vanilla sugar
- 0.5 lemon
- 2 tsp baking powder
- 300 g all purpose flour
Ingredients
- 2-3 medium size peaches
- One stick of butter at room temperature
- 3 medium eggs at room temperature
- 300 grams of cottage cheese or ricotta cheese
- 180 grams of sugar (optional; I use monk fruit or any sugar replacement)
- One pack of vanilla sugar (optional)
- Half of lemon juice and lemon zest (optional)
- 2 teaspoons of baking powder
- 300 grams of all-purpose flour or baking flour
Cooking instructions
Turn on the oven at 360F
Prepare the baking dish with butter and dust it with flour.
In the bowl, put the peaches and pour over with boiling water for 3-5 minute-ish until the skin softens slightly. If peaches are soft and enough for piling up skip this step.
Remove the peaches from the water, pile the skin, and cut them into thin slices.
In a mixing bowl, mix butter, sugar, and vanilla until smooth.
Add 3 eggs and mix well.
Then add cottage cheese or ricotta cheese, lemon juice, and zest mix.
Add flour and baking powder and mix all together until smooth and soft.
Pour into the prepared baking dish and on top of the dough put the sliced peaches and slightly brush with soft butter it gives the peaches caramel flavour.
Bake for about 45 minutes to 1 hour until golden brown and slightly crisp on the side.
Meanwhile, prepare hot tea or coffee.
Remove from oven, wait until warm, and dust with sugar powder served with scoops of ice cream.
Enjoy.
