Scharffen Berger 99% Cocoa Couverture
Most of us are accustomed to commerical unsweetened "baking chocolate" which is harsh, bitter and gritty on the palate. These chocolates are made to be combined with lots of sugar and cooked or baked.
Scharffen Berger 99% is another species entirely. It is as fine textured as the finest eating chocolate. It melts on the palate and feels like the finest eating chocolate. Although it is unsweetened, there is absolutely no harshness. Hard core chocolate lovers can and do, nibble this chocolate! If you have never done it before, you will find it challenging to taste unsweetened chocolate, first, because the bitterness, even though it is not harsh, may be too much or too distracting. Second, sugar does bring out the flavors of chocolate. But I hope you will try to taste this chocolate anyway.

Dark chocolate color. Excellent gloss.
Delicate but compelling chocolate aroma.
Superbly smooth even melt. Absolutely silken on the palate.
Excellent hard snap.
The characteristic Scharffen Berger cherry flavor is prominent at the front with a tart but sweet spike of flavor. The chocolate notes are soft delicate with subtle hints of citrus Although there is no sugar in this chocolate, it is not truly bitter and not at all harsh. Lingering astringency invites another nibble.
