Moist Banana Bread With Cranberries Recipe

This banana bread recipe is loaded with ripe bananas and tangy-sweet cranberries. 

It is one of our family’s favorite recipes. 

Great for breakfast or snack.

Banana Bread with Cranberries

Moist banana bread, loaded with ripe bananas and tangy-sweet cranberries

Total Time 1 hour 10 minutes
Servings 10 people

Ingredients
  

  • 3 bananas very ripe bananas ( small/medium)
  • 1/2 cup unsalted butter or one stick at room temperature 
  • 3/4 cup granulated sugar you can use a sugar sub
  • 2 eggs medium/large
  • 1.5 cup all-purpose flour 
  • 1 tsp baking soda 
  • 1/2 vanilla extract  optional
  • 1  lemon zest 
  • 1/2 lemon lemon juice 
  • 1/2 cup cranberries

Instructions
 

  • Preheat oven to 350 F 
  • Grease and flour bread loaf ( 9.25 long x 5.25 wide) or baking pan (15×10 Large glass baking dish) 
  • In a mixing bowl mix cream butter, salt
  • And sugar and eggs.
  • Stir
  • Add bananas, mix well together until the mixture is smooth.
  • Add lemon juice and zest, vanilla, and flour & baking soda.
  • Stir.
  • Add cranberries.
  • Bake at 350 F for 50-60 minutes
  • Cool down for 15-20 minutes

  • 1 1/2 cups of all-purpose flour 
  • 1 tsp baking soda 
  • pinch of salt 
  • 1/2 vanilla extract ( optional) 
  • 1 of lemon zest and 1/2 of lemon juice 
  • 1/2 cup cranberries 

Instructions

Preheat oven to 350 F.

Grease and flour bread loaf ( 9.25 long x 5.25 wide) or baking pan (15×10 Large glass baking dish).

In a mixing bowl, mix cream butter, salt.

And sugar and eggs.

Stir.

Add bananas and mix well together until the mixture is smooth.

Then add lemon juice and zest, vanilla, and flour & baking soda.

Stir.

Add cranberries.

Pour into prepared pan.

Bake at 350 F for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Let banana bread rest and cool down for 15-20 minutes then transfer to a wire rack to cool completely.

Ps. You can add half a cup of walnuts and half a cup of raisins if you don’t have cranberries.
